蓝莓芝士蛋糕
蓝莓芝士蛋糕材料
奶酪300克、牛奶170克、鸡蛋黄4个、鸡蛋白60克、蓝莓200克、黄油45克、玉米淀粉12、克白砂糖55克。
蓝莓芝士蛋糕做法
1).把牛奶和黄油放进小锅里加热到沸腾前就关火,稍凉;
2).蛋黄+25克细砂糖打发到蛋黄变浓变稠,颜色变白,筛入玉米淀粉拌匀;
3).把牛奶黄油液倒进蛋黄里拌匀后再倒回小锅里加热,不停的搅拌,变稠后就马上关火;
4).把室温软化好的奶油奶酪用小刮刀拌顺滑,加入进牛奶黄油蛋黄糊里拌匀;
5).蛋白里分3次加入30克细砂糖,打发至湿性发泡状态。(打发蛋白时烤箱以160度预热);
6).把蛋白霜分2次加入进奶酪蛋黄糊里拌匀后倒入一半进模具加入部分蓝莓,最后再倒进剩下的一半面糊后在表面摆上蓝莓;
7).上下火160度,隔热水烤60分钟,表面上色均匀后,取出稍微放凉后进冰箱冷藏3小时以上吃更加美味.
